The Cooper King DIstillery was founded in 2016 by married couple Dr Abbie Nelson and Chris Jaume. Abbie was a biomedical scientist and Crhis was an architect, but both had a love of whisky that exploded during a trip to Australia - and in particular Tasmania.A week-long work experience at the Lark Distillery was enough to inspire the pair to launch a full distilling operation just to the North of York - not that far away from yours truly.
Sustainability is a key part of the business, but for a while it felt like the boom in the gin market meants whisky production took a back seat. But now the business very much has a strong portfolio of both whisky and white spirits and is streadily growing an excellent reputation.
Despite the fact Embers has 'Wood SMoke + Corn' written on the front label, 100% Maris Otter barley is used in this release - the 'Corn' references the flavour profile which is redolent of corn on the cob cooked over a bonfire. 68% heavily charred ex-Bourbon barrels are combined with 32% ex-red wine barrels for an average of just over 4 years aging to produce a profile of wood smoke as opposed to peat smoke. No peat was used to dry the barley so the soft smoky tones are pulled from those heavily charred barrels, with the wine casks adding hints of dark cherries and prunes. It's a fascinating whisky that is excellent in an Old Fashioned or Manhattan!

Shipping rates are based on WEIGHT of goods - the total weight of your order will determine the cost of the shipping charge due to price banding imposed by Royal Mail. Orders weighing up to a max of 2kg will be charged £5.99, and orders weighing over 2kg will be charged £7.99. ANY PURCHASE OVER £150 WILL RECEIVE FREE SHIPPING.
PLEASE NOTE: The Spirit Specialist is CLOSED on Sundays and Mondays - all orders are collected by Royal Mail the day after they are packaged up. As such, if you place an order on a Saturday, Sunday or Monday, your order will be packaged up on the following Tuesday at re-opening, and then collected by Royal Mail on the Wednesday morning. PLEASE BEAR THIS IN MIND IF YOU ARE WORKING TO A DEADLINE!

All goods must be examined at the time of delivery and any damages or shortage must be recorded on the relevant delivery acceptance forms with the delivery. Un-examined or un-checked goods that result in a subsequent claim outside of a 48 hour period will not be accepted. Queries relating to claims must be made within 48 hours of receiving the goods, otherwise claims cannot be guaranteed.
