The Daftmill distillery and farm is based near Cupar in the Kingdom of Fife. One of the smallest distilleries in Scotland, it was founded by brothers Francis and Ian Cuthbert in their family farm, which grows potatoes, carrots, brocolli and malting barley along with rearing cattle. All the work to convert old mill buildings into a distillery – with the exception of the stills from Rothes – was completed by people living within a five mile radius.

From an initial idea in 2003, a distilling license was granted on St Andrews Day in 2005 and distilling commenced on 16th December that year. All barley used to distil is grown on the farm, and distilling takes place in two batches on a seasonal basis around spaces in the farming calendar during winter and summer.

Only 20,000 litres of spirit is produced each year. The inaugural bottling was released in 2018 as a 2005 vintage 12yo. This particular bottling was distilled in Summer 2011 and bottled in September 2023 as a 12yo, with an outturn of 6550 bottles resulting from 27 first-fill ex-Bourbon barrels diluted down to an ABV of 46%.
