The Diamond Distillery on the banks of the Demerara River in Guyana is the only distillery left in the country - following a consolidation of distilleries Diamond remains as a massive operation, producing huge amouns of Demerara rum on a daily basis. The general flavour profile tends to be a rum with notes of brown sugar - as one might expect - but also rich chocolate and hints of coffee.

Aged in ex-Bourbon barrels for a minimum of five years, this has warming tropical notes of butterscotch and orchard fruits, with a hint of toasted coconut on the finish. It's a pretty good sipper but I much prefer this in the likes of a Mai Tai, as it accentuates the feel of the Caribbean atmosphere in the glass.
