The city of Evanston, Illinois - not too far from Chicago - lays claim to be the 'birthplace' of the Temperance Movement, which eventually resulted in Prohibition from 1920 to 1933. From it's inception in 1851 until as late as 1972, Evanston remained a 'dry' town - and when Paul Hletko founded the FEW Distillery in an old chop shop in 2011, it was the first business to produce alcohol in the city.

A fully grain-to-glass operation, FEW can rightly call itself a 'micro' distillery, focussing on high quality, small batch releases.

Cold Cut is something a bit different, however. Cask strength Bourbon - with a mashbill of 70% corn, 20% rye and 10% malt - is reduced down to a bottling strength of 46.5% ABV not with clean, filtered water but cold brew coffee.

This is not as coffee-ish as you might think, though. It;s still very much whiskey-forward, with the coffee element much more in the background and on the finish. I almost wish the coffee influence was stonger, but then the danger is we go more in liqueur-y territory - Paul clearly wants you to experience his whiskey first, rather than drink a whiskey flavoured coffee.

It is, however, perfect in an Old Fashioned with Runamok Maple Syrup and Dashfire Orange bitters, which pull more of the coffee/dark chocolate notes out. And it's well worth a go in a Manhattan, as the red wine tones within sweet Rosso Vermouth again work brilliantly.
