Henstone Rosé Gin 44.9% 70cl
Based in Oswestry, Shropshire, the Henstone Distillery was founded in 2017 by friend Chris and Alexandra Toller and Shane and Alison Parr – Shane and Alison were already running the established Stonehouse Brewery and the foursome wanted to move primarily into whisky production. Henstone itself is an amalgamation of the old Hen & Chickens pub that Chris & Alex live in, alongside ‘Stone House’ belonging to Shane and Alison.
A 1000 litre pot/column hybrid still named ‘Hilda’ was manufactured in Germany, and the first batch of new make spirit went into cask on 10th January 2018.
Similar to the Spirit of Yorkshire Distillery and the co-owned Wold Top Brewery, Henstone is sited next to the Stonehouse Brewery and so utilises the facility to produce the wash using an unhopped barley mash. As the still is a combination of pot and column, there is also no need to have separate wash and spirit stills, cutting down on space and energy use.
While spirit was maturing to become whisky in ex-Bourbon casks (although they also have spirit resting in Oloroso and Pedro Ximenez casks along with some other ‘secret’ barrels), Henstone also produced a range of gins, vodkas and a ‘Nonpareil’ apple brandy.
The Rosé Gin is a bit of a misnomer and the team accept that the name might need to be changed - the colour isn't pink and there no roses are involved in the production - instead the base gin is rested in virgin American oak casks for around 8 weeks to pick up a soft golden colour and some lovely vanilla notes. Drunk neat it's very similar to a classic Vesper Martini, with the oak aging providing the sweet spicy notes that would have been created by the additional of Kina Lillet/Cocchi Americano to a base gin in the cocktail. If you plan to mix with tonics, choose a soft, netural one as more sour tonics will kill the softer notes within the spirit.
