The Dunnet Bay Distillery is based in Caithness - it's the most Northerly gin distillery on the mainland of Scotland. It was founded in 2014 by Martin Murray, who previously worked in the oil and gas industries but had a love of brewing and distilling thanks to his scientific background. HIs wife Claire runs the marketing side of the business, and long-term employee Hannah works as a gardener in a small geodome, experimenting with growing botanicals in what would otherwise be a harsh and unforgiving climate.
Although the gin range is named 'Rock Rose', their vodkas are branded 'Holy Grass', another name for sweetgrass or bisongrass, that forms a key botanical for their base spirit. The core Holy Grass vodka has a lovely silky texture with a slightly floral sweetness thanks to that grass type, which then works beautifully with an vapour infusion of crisp green apples, a flavour profile inspired by the apple trees in Martin's grandfather's garden.
The balance is excellent - the apple profile has a sweet-tart note softened with the sweetgrass but still shining through. It's superb with an off-dry Vermouth or as a long drink with a good quality lemonade!

Orders weighing up to a max of 2kg will be charged £5.99, and orders weighing over 2kg will be charged £7.99. ANY PURCHASE OVER £150 WILL RECEIVE FREE SHIPPING.
PLEASE NOTE: The Spirit Specialist is CLOSED on Sundays and Mondays - all orders are collected by Royal Mail the day after they are packaged up. As such, if you place an order on a Saturday, Sunday or Monday, your order will be packaged up on the following Tuesday at re-opening, and then collected by Royal Mail on the Wednesday morning. All products are securely packaged in Air-Shock bottle bags or frankly excessive amounts of bubble wrap for additional protection.
All goods must be examined at the time of delivery and any damages or shortage must be recorded on the relevant delivery acceptance forms with the delivery. Un-examined or un-checked goods that result in a subsequent claim outside of a 48 hour period will not be accepted. Queries relating to claims must be made within 48 hours of receiving the goods, otherwise claims cannot be guaranteed.
