Milk and Honey
Milk & Honey Elements Peated Single Malt Whisky 46% 70cl
Milk & Honey is Israel’s first whisky distillery, established in 2012 just south of Tel Aviv. The first ever single malt whisky for the country was released in 2017 as three-year-old malt distilled at a temporary location - distillation at the current site only started in 2015, with the help of industry legend Dr Jim Swan.
A wide variety of cask types - all of which are kosher - have been utilised by the team, and the intense climate menas maturation is 'faster' due to increased interaction between spirit and wood thanks to the greater fluctutations in temperature.
'Peated' creates a soft smoky profile with part-maturation in barrels that previously held heavily-peated whiskies from Islay - a technique similar to the Peated Finish from Spirit of Yorkshire's Filey Bay.
The smokiness is soft and sweet - with a hint of spice on the finish that introduces a pleasant tingle on the tongue. There's sweet apple combining with cracked black pepper, alongside salted toffee and a hint of hazelnuts. It's certainly an interesting twist on the M&H range and evidence the team really do know what they're doing!
