A staple ingredient for what can be considered a classic Martini, Joseph Noilly, a herbalist, developed a process in 1813 to create a crisp and dry vermouth that drinks brilliantly on it's own but partners gin to perfection.

White grape varieties from the Marseille region are used to produce a light, fruity wine that rest in large Canadian oak barrels for 8 months before transferred to smaller oak casks that are left outdoors for a year, exposed to the elements while continuing to evolve within the wood. After this period of maturation, the wines are then macerated for a further 6 weeks with a top secret receipe of over 20 botanicals, including camomile, bitter orange peel, nutmeg, coriander and cloves.

This drink is all about elegance and refinement. There's delicate complexity throughout, with a style that is second to none. A small chilled glass of this with a light chicken or fish dish is a great partner (it's bottled at 18%, so go easy!) but 1 part of this to 3 to 4 parts of a crisp, citrussy gin is pure heaven!
