    Founded in 2018 by business partners Mike Paladini and Danny Polise, Penelope Bourbon is named after Mike's daughter who was due to arrive that year. As with many American whiskey brands, Penelope source their whiskies from MGP in Indiana, but the focus was on more unusual barrel maturation and more quirky flavour profiles. The brand grew so much in popularity due to the quality of the liquid that MGP ended up acquiring Penelope for $105 million, with a potential additional $110 million on offer if certain performance conditions are met by the end of 2025. Not bad going!

    The ;Architect' series 'builds' new flavour profiles with the use of specific barrel stave types - in this case French oak staves. 'Creme Brulee' was a limited release in June 2025 which sounds like it is a flavoured whiskey, but instead uses the term to describe the flavour profile created by the specific staves used. It's a fascinating whiskey, with heavily charred staves provding a hint of the burnt caramel topping initially, before it softens on the finish to give the effect of the softer custard and vanilla note underneath. The high ABV accentuates that charred note too. This will throw some people, who will be expecting a sweeter note throughout, and you do have to do a little bit of work initially to pick up those flavours - but when you find them, you can't miss them!

Orders weighing up to a max of 2kg will be charged £5.99, and orders weighing over 2kg will be charged £7.99. ANY PURCHASE OVER £150 WILL RECEIVE FREE SHIPPING.

    PLEASE NOTE: The Spirit Specialist is CLOSED on Sundays and Mondays - all orders are collected by Royal Mail the day after they are packaged up. As such, if you place an order on a Saturday, Sunday or Monday, your order will be packaged up on the following Tuesday at re-opening, and then collected by Royal Mail on the Wednesday morning. Un-examined or un-checked goods that result in a subsequent claim outside of a 48 hour period will not be accepted. Queries relating to claims must be made within 48 hours of receiving the goods, otherwise claims cannot be guaranteed.
