Despite launching in 2018 with Lind & Lime Gin, it was only in the summer of 2023 that the Port of Leith whisky distillery opened. However, production was already taking place in their original industrial unit, followed by the Lind & Lime Gin Distillery, and barrels were sourced to mature what would become their whisky. To provide a guide as to the influences on said whisky, the team have bottled and released port and Sherries from their original cask sources - in the case of this off-dry Oloroso Sherry, obtained from Bodegas Baron. There's a lovely salted toffee note alongside dried orange peel and a hint of cashew nuts. It'll work wonders lightly chilled alongside a cheeseboard or a sticky toffee pudding!
