Irish ‘Pot Still’ whiskey is a term that has nothing to do with the shape of the still but the use of unmalted as well as malted barley in the distillation run. It’s pretty much unique to Ireland, and produces a distinct juicy berry flavour, which adds a fruity note to popular Irish blends. Here, Pot Still whiskies are married with Single Malt, around 40%/60%, all from ex-Bourbon barrels using spirit from the Midleton distillery (although the brand is under the ownership of Walsh Whiskey) – triple distillation also helps produce a lighter character, making this incredibly easy to drink while still featuring plenty of complex notes of apple, honeycomb, soft ginger and vanilla cream.
