Abasolo Whisky is produced at the Destilleria y Bodega Abasolo in the small town of Jilotepec, 100 kilometres North West of Mexico City. It was the first purpose-built distillery in Mexico and is one of the highest in the world at around 7800ft above sea level.
Dr Ivan Saldana is the master distiller, who is a forward thinking creator of spirits and not afraid to experiment with distillation processes. Abasolo is a corn based whisky that utilises an ancient process called Nixtamalization – a centuries old techinique dated back to MesoAmerican times in which the corn is soaked and cooked in an alkaline solution such as before washing, hulling, roasting and milling, which releases a considerably deeper and richer flavour and aroma. It’s the first time this process has been used for producing a spirit – traditionally nixtamalization is used to create masa, which is the base for tortillas, tamales and other classic Mexican staples.
The corn itself is called Cacahuazintle (kaka • wha • SINT • lay), which has been cultivated and passed down for more than 200 generations by local farmers for its distinct flavour. Mexico can be considered the ancestral ‘home’ of corn and Cachuazintle is one of the earliest types in existence. A small amount of malted corn is also used during distillation, before the spirit is matured in a combination of virgin and ex-Bourbon casks. It is then rested in a warehouse that has no walls, meaning the barrels are subjected to the vastly changing elements of the Mexican weather.
Abasolo Whisky is bottled at 43%, it is not known whether chill filtration takes place or colour is added.

All products are securely packaged in Air-Shock bottle bags or excessive amount of bubble wrap for additional protection.
All goods must be examined at the time of delivery and any damages or shortage must be recorded on the relevant delivery acceptance forms with the delivery. Un-examined or un-checked goods that result in a subsequent claim outside of a 48 hour period will not be accepted. Queries relating to claims must be made within 48 hours of receiving the goods, otherwise claims cannot be guaranteed.
